How do animals evolve?

i know how they evolve and i understand the process, but there's something i dont get. how do they know what to change into? ill use an example so its not so confusing. just about everyone knows what a leafy sea dragon looks like; its body looks just the kelp. how did that happen? there are even seahorses that look like pink coral. even insects do that [stick bug]. how is that possible?
